Job Summary:

This person will perform complex, non-repetitive, technical duties relative to managing Laboratory functions within the plant. Provide leadership to plant and Lab and personnel to assure that internal and external product specifications are achieved/maintained. Perform standardized qualitative and quantitative tests to determine physical, microbiological or chemical properties of food products.  Assure all regulations & customer regulations are met.   Aid in commercialization, product and process improvement.  Generally requires 5 or more years of work experience with 3 years of relative experience as a Microbiologist, Chemist or similar function with a four year degree.  Proficient in Excel, Word, and PowerPoint.  Bilingual, Spanish preferred, but not required.   Must be able to work with a cross functional team representing and providing technical expertise in the area of both Chemistry and Microbiology of products.   This team would include Marketing, Sales, R & D, Quality Assurance and Operations.

Essential Functions, Duties & Responsibilities

  • Assist with developing, implementing and maintaining laboratory programs  i.e., Microbiological programs, chemical analysis, product testing, environmental testing.
  • Develop new micro and chemical methods and procedures.
  • Negotiate with vendors for lowest prices.
  • Assist with research and development work on cost effectiveness, implementing line extensions/product changes and in-plant testing of new products prior to full-scale production.
  • Use company computer software to design sampling programs for PCS,environmental and processing swabs.
  • Oversee and perform Lethality Studies
  • Oversee and perform Challenge studies.
  • Utilize laboratory data to prepare reports, graphs, and charts for membes of management  and initiate applicable corrective measures.
  • Provide data analysis and trending of data.
  • Provide guidance in troubleshooting microbial issues.  This would include finished product, ingredient, sanitation and environmental issues.
  • Provide guidance in troubleshooting formulation issues relate to chemical analysis.
  • Perform chemical and physical analysis of food ingredients and finished food samples using established chemistry methods and procedure to ensure complaince to standards and specfications.
  • Participate in providing Corporate with laboratory assisstance involving product performance, both improvements and corrective measures.
  • Develop, implement Lab Personnel Training.
  • Development of supervisory personnel for further advancements and overall job           satisfaction.
  • When QA manager is not availble serve as liaison with local, area, and Federal USDA and FDA personnel.
  • Conduct facility audits and audit Lab technicians job performance.
  • Post appropriate members of management when deviations occur for corrective action.
  • Maintain laboratory profeciencty testing standards and accrediation.
  • Maintain laboratory standard procedures manual.
  • Maintain laboratory safety manual.
  • Verification of laboratory training as well as providing training material.
  • Provide guidance of  product and ingredient lethality studies.
  • Provide technical expertise to the plant on sanitation and gmp’s.
  • Provide guidance on customer complaints related to spoilage.
  • Provide guidance to customers in areas of Food Safety.
  • Serve as processing authority in the event Quality Director not availiable on HACCP deviations.   
  • Provide expertise to the sanitation team on cleaning procedures, sanitizer procedures, as well as environmental cleaning processes and procedures.

Knowledge, Skills & Abilities

•         Experience as a Microbiologist or similar function in the Food Manufacturing Industry.

•         Ability to prepare standard solutions and reagents for use in chemical testing and maintain stock of necessary lab materials. 

•         Ability to work with cross functional team and provide the necessary Food Safety and microbial and chemical analysis expertise on products, processes and procedures. 

•         Proficient in Excel, Word, and PowerPoint. 

•         Bilingual English/Spanish preferred. 

Education & Experience: 

•         Generally requires 5 or more years of work experience with 3 years of relative experience as a, Microbiologist, Food Chemist or similar function with a four year degree from an accredited college or university.

•         Must be HACCP certified.

Additional Responsibilities:

  • Insure regular calibration of chemistry lab equipment, including annual certification, as well as routine maintenance of chemistry lab equipment.
  • Demonstrate competency on all test methods, lab SOP’s and instrument calibrations to a level sufficient to perform all assigned work and to be able to train others.
  • Clean and sterilize equipment as needed.
